How do you make a Beef Stew?

I love beef stew. My mother used to make a fantastic stew, but unfortunately I never got her recipe. And now she’s got dementia I’m never going to get it. So I’m looking for some advice from all you cooks out there. I don’t want a stew with lots of herbs etc. just a basic beef stew. I’ve looked on the internet and I’ve ended up more confused about what ingredients I need and how I should cook it. What is the right beef to buy? I tried before and whatever cut of beef I bought it was as tough as old boots after I cooked it, even after hours of letting the stew cook and simmer. Whatever meat my mother used in her stews was so tender it would melt in your mouth. Is there a beef stew mix, do you use tinned or packet soup, or do you make your own? I know you use onions and carrots, but what other veg is nice in a simple plain stew? After you put in the water and the mix do you just drop the meat in, or do you prepare it first? The  Dublin  man – who played Agnes Brown’s hairdresser son – left the hit BBC show after 26 years earlier this month. I have to say that Prince Philip makes me laugh. I’m a fan! I admire his ‘get on with it’ attitude and his politically incorrect comments. Those comments are always guarenteed to make me laugh. He once asked a driving instructor in Scotland, “How do you keep the natives off the booze long enough to get them through the test?” Now for anyone else to say that there’d be uproar, but when the Duke of Edinburgh said it we all laughed. It’s his outspokenness and total indifference to public opinion that endears him to most people. Another favourite of mine is when he visited Nigeria a good few years ago. The president of Nigeria turned out to meet the Prince wearing the national costume, a stunning white robe, covered with embroidery and with big billowing sleeves. Prince Philip took one look at him and said “You look like you’re ready for bed”. Only he could get away with that. I know some of you will turn this video off or close this link down, because the film will upset you. But it’s not the film that is the problem. It’s what’s happening in it that’s the problem. Be upset that this is happening in Spain, for entertainment. The bull was tied up, his horns set on fire and the terrified bull ran into a post and died. And all in the name of entertainment? If you saw your child killing a cat or a bird you’d whisk the boy or girl off to a doctor to see what would make him/her do such a thing. You’d worry yourself sick that this cruelty to animals was a sign of something terribly wrong in your son or daughter and you’d do everything in your power to fix your child’s problem. Yet when it comes to bullfighting, running with bulls, or killing bulls in arenas it’s seen as sport, or culture or tradition. It’s not any of those things. Controversial BBC One comedy star wants to book into Benidorm!

One word: CHAOS It'd certainly be one hell of a comedy crossover, if the stars of the BBC's huge hit Mrs Brown's Boys were to check into ITV's Solana resort. But that's the idea that has been suggested by Irish funnyman Brendan O'Carroll. It’s lovely that so many people want to be on the show. Apparently he is a big fan of the show and would love to send the Brown family on a trip to Benidorm. Actress Sherrie Hewson revealed that the Mrs Brown's Boys boss Brendan asked her to suggest the idea to Benidorm's writer Derren Litten. Sherrie, who plays Joyce Temple Savage in the ITV sitcom, told the Daily Mirror that people often approach her about wanting cameos in the sun-soaked show. “Another person who asked me to ask Derren about coming on the show was Brendan O’Carroll from Mrs Brown’s Boys," she revealed. “He said to me, ‘couldn’t we all just come into the hotel and check in as a family? Even if you don’t see us again

Letter To My Younger Self

A few months ago I was asked by Ireland’s Big Issue Magazine to write a letter to my younger self offering words of wisdom. Here’s what I wrote to my 17 year old self. Dear Me, It’s June 1977 and you’ve started a new job you love, in a record shop owned by EMI, in O’Connell St Dublin. You’re earning £21.50 per week and you’re getting paid to do something you’d do for nothing at home; play records all day long. It’s the perfect job for you and probably the most enjoyable job you’ll ever have. You’re off to a great start to your working life. In school you showed a talent for Maths and your mother decided “a job in the bank” would be the ideal job for you “It’s a job for life with a good pension and favourable mortgage rates for employees”. The Generation Game Is Returning To Our Screens With Mel And Sue As Hosts

The former Bake Off presenters set to host the legendary show’s return! It has been announced that the classic entertainment / game show ‘The Generation Game’ is to make a return to our screens with former Bake Off presenters Mel and Sue hosting. The show is set for an initial run of just four episodes but a date for launch has not yet been decided. “It’s a cuddly toy, it’s a toaster, it’s a circular power saw, no it’s Mel and Sue doing the Generation Game! Can't fathom how Brendan O'Carroll's comedy became such a big hit at Christmas (and the rest of the year)? Sarah Doran investigates...
